2.5cm or 5cm width, which should I get?

Comes down to your grip size. The 2.5cm width suits slimmer setups like a rotary tattoo machine or pen-style grip; the 5cm covers thicker handles or gives you a bit more cushioning if that’s what you’re after. Not sure which you’ve got? Sizing up is the safer bet, since it wraps to whatever tightness you need either way.

Is this tape single-use, or can I reuse it?

Single-use, and that’s by design; it’s a disposable, medical-grade bandage material rather than something meant to come off clean and go back on for the next client. No chemical glue in it either, so there’s no sticky residue left on the machine once it’s removed.

Does it fit coil machines as well as rotary or pen-style ones?

Grip tape like this generally works across handle shapes since it’s the elasticity doing the work, wrapping and adjusting to whatever you’re covering, rather than being cut to one specific grip profile.

Will it actually stop my hands sweating and slipping during a long session?
